What’s Thaumatin?
Thaumatin sweetener also called African arrowroot sweetener, it is very sweet material extracted from peel of Thaurnatocuccusdanielli. It is natural protein.
It is a low-calorie sweetener and flavor modifier. The protein is often used primarily for its flavor-modifying properties and not exclusively as a sweetener.
It is approved for use in chewing gum in the United States in 1984, and now approved for use in many countries, it is a promising natural food sweetener. It is sweet 2000~2500 times sweeter than sucrose.
Characteristics:
●Off white powder, very sweet;
●It is basic protein;
●Easily soluble in water, soluble in 60% ethanol, insoluble in acetone;
●The thaumatin sweetener is stable in the pH range of 2 to 10, heating below 100 °C (or ultra-high temperature instantaneous sterilization above 100 °C), and stable in acid.
Applications:
★It is non-caloric sweetener, flavoring for general foods and health foods. It is suitable to be used in conjunction with sugars such as sucrose in coffee, chocolate, gum candy, beverages, cold drinks, desserts, bakery products, etc.
